...next give all other ingredients (except the raisins) into the mixing bowl... ...425 grams of flour, 65 grams of sugar, 115 grams of soft butter... ...1 sachet of baking powder, â½ teaspoon of salt... ...and finally the egg-milk-mixture... ...now knead with a kitchen machine or mixer with dough hook... ...for about 4 - 5 minutes... ...until a smooth but still sticky dough... ...stop the mixer or turn it on low speed... ...and add 100 grams of raisins...
...briefly knead them in... ...this shouldn't take long... ...only as long as all raisins are well incorporated... ...flour the countertop... ...give the sticky dough onto the floured surface... ...flour the dough a bit on top as well... ...and start kneading with your hands... ...by pulling the dough from the outside inwards... ...and slightly pressing in the middle...
...knead until the whole dough is coated with a light flour layer... ...then turn once... ...form a ball... ...and slightly flatten it with your hands... ...then get a rolling pin and roll out until a thickness of 2 â½ centimeters... ...now i got a round cookie cutter with 6 - 7 centimeters diameter here... ...to cut out round circles... ...in total you should get 10 - 12 scones with this recipe... ...knead together the excess dough, roll out again & cut out more scones as seen...
...place the round dough circles on a lined baking tray... ...by leaving plenty space between each others... ...& brush with the egg-milk-mixture we have set aside at the beginning... ...then bake in the preheated oven at 220â°c (top/bottom heat)... ...for about 12 - 13 minutes... ...then get the scones out of the oven... ...and allow to cool for 10 minutes... ...thats what they should look like... ...wonderfully risen & a beautiful goldenbrown color...
