the important of ice cream besides the fast freezing is that we introduce a lot of air (mumbling in english) because this makes the ice cream nicely fluffy while the liquid nitrogen flows into the bowl it starts to evaporate and thereby the water in the air becomes liquid tiny water droplets form it's not the liquid nitrogen which you can see here as fog
no, it is a swarm of nucleated water droplets in the air just like clouds, but not in the sky but here in front of us wow, we are almost done with the ice! that was fast this time! so you can see, the ice cream is ready now - well you don't see it but i can show it to you. it really froze very rapidly that was quick so let's give the ice cream a last final touch
